A Homemaker’s Morning || March 31, 2021

Good afternoon, friends! After a busy morning, I’m snuggled up with my one-year-old and thought I would take a moment to pop in here. How are you doing?

Heavy rain kept me up most of the night. Goodness, we have had so much rain! I ran through the rain to check on my carrots and deliver table scraps to our chickens a bit earlier. Thankfully it is nice and warm outside, despite the wet weather.

This is actually some of our flock yesterday. They were enjoying the weeds my four-year-old kept tossing to them.

I woke up deciding to see the good in the day. Yesterday wasn’t the best, and I was determined that today would be better. And it has been.

Anyhow, after waking up, we worked on school things while eating bagels for breakfast. We made a patchwork pillow for Makynlee’s math lesson, which was super fun. We used pink fabrics that she just loves.

I also pressed four shirts and made a skirt this morning. I’m very thankful for my Etsy orders. They are a joy to make!

Our squash starts are growing quickly, and I pulled off their greenhouse domes this morning. They should be ready to go in the garden in a few weeks, and I’ll be up-potting them soon.

Today I also re-evaluated some financial things, namely our mortgage debt and our future plans. My husband and I have been stuck between putting extra on our mortgage and saving, and I think for now we are making the right decision. We have decided to hold onto our cabin for now, too. We are thankful that it is paid off, and we have been able to offer it to my mother-in-law while she’s in limbo between selling her house and finishing an apartment in our basement. Everything seems to be working out, but sometimes I wish I could see into the future to know what decision to make.

I worked on a grocery shopping list this morning, too. One of the things that I don’t particularly like about our area is that the nearest Walmart is in a rather large town. I’ve been a small town Walmart girl all of my life, ha! Well, today we’ve decided to finally try a smaller local grocery store to see how we like it. I’m pretty excited about it.

My Husband’s Favorite Granola Bars

Good afternoon, ladies! I hope you have had a good day so far. I have been busy sewing skirts for my Etsy shop, homeschooling, cleaning out my closet, and baking a batch of granola bars for my husband.

My husband loves to snack on these, and I thought I’d share the recipe with you! They are very simple to make, and my kiddos enjoy helping me mix the ingredients.

Cranberry Almond Granola Bars

Dry Ingredients

4 cups of Old-fashioned oats

1 cup dried cranberries

1 cup sliced almonds

2/3 cup unsweetened coconut flakes

Wet Ingredients

1/2 cup coconut oil

1/2 cup honey

3/4 teaspoon vanilla extract

Instructions:

Preheat your oven to 250 degrees. Mix the dry ingredients in a large bowl and set aside. Put the coconut oil and honey in a saucepan, and cook on low to medium heat until the coconut oil has melted. Remove from heat, and stir in the vanilla extract.

Pour the wet ingredient mixture over the dry ingredients, and mix well. Pour the granola onto a parchment paper lined baking sheet, and press down. Bake on 250 degrees for one hour.

Once the granola has cooled, cut into squares or bars.
